      My husband has been making this for years just without the pepper flakes. He seasons with salt and pepper. He always makes it in the crockpot and lets it cook for a while and meld together. Yummy! Make sure to use a crock pot liner for easy clean up!

    Hi, just made this tonight and everybody loved it. I changed the red pepper flakes to sumac and the sharpness of that really hit the palette along with the sweetness of the sweetcorn.

    I’m going to try this soon. I got all the ingredients. I don’t have a scale though. How many cups would u say 1 lb of corn is? I’m planning to just put 2 cups. Is that about right?

      A lb is 16 oz… A cup is 8 oz, so a lb is 2 cups! 🙂

        A cup is a measure of volume, not weight ( 1 cup=8 oz water using a liquid measuring cup). For other liquids and solids, the measurement is a function of volume, not weight (1 cup of feathers does not equal 8 oz but it still equals 1 cup in volume). Just be aware of this, otherwise you may end up with the wrong proportions.

    I have been making this for years and we love it. The only thing I do differently is use white corn! It makes for a beautiful, sort of monotone- colored dish and everyone is intrigued when they see it and everyone asks for the recipe. Thanx for sharing.

    My mom and I have been making this for years. We had a little sugar to the Butter and cream cheese. He also add like a 1/2 stick of real butter and a whole pkg of cream cheese. Its amazing. I am going to try it without the cream cheese and see if my son likes it better. He is the only one that its not his favorite.

    This is very similar to a dip I like to make with Fritos. Corn, butter, cream cheese, and diced jalepeno peppers! Mine goes like this:

    1 stick butter
    1 8 oz. pkg cream cheese
    1 can corn
    1/2 cup diced jalepenos

    Melt. Dip. Yum.

    3 cans of corn
    1 8oz. cream cheese
    a little butter
    chopped jalapeno… (never measure …..just to taste)
    microwave until melted & heated… serve with crackers or nacho chips…
    I always make this for taco night & it is always a hit…..
