These Spanish Flatbreads, known as Tortas de Pan con Miel y Azafrán, are packed with flavors, we´re talking sweet & savory goodness, they´re seriously easy to make and take only 10 minutes of prep work. Truly, the easiest & best flatbreads I have ever tasted.

What makes these flatbreads really stand out, besides the fact that there´s no yeast or oven involved, is the secret ingredient that is used, which is honey. Not only does the honey give these flatbreads a sweet flavor, but it also helps in giving them an incredible pillowy texture.

To make these flatbreads I used all-purpose flour. But you can also use whole wheat flour, bread flour or even gluten free flour. Just use the exact same measurements as stated below in the recipe card.

TIPS & TRICKS to Make this Recipe: You can shape the flatbreads in any design you like. The most important part is the thickness. You want a thickness of no more than 1/4 inch (.635 cm) thick. This way they fully cook through, without browning too much on the outside. And you want to use a nonstick pan on a medium heat or even a low-medium heat.

10-Minute Spanish Flatbreads | Tortas de Pan con Miel y Azafrán

Ingredients

  • 3cupsall-purpose flour360 grams
  • 1tbspbaking powder12 grams
  • 3/4tspsea salt4.5 grams
  • 2tbspextra virgin olive oil30 ml
  • 3tbsphoney80 grams
  • 1/4tspsaffron threads.17 grams
  • 1cupluke warm water240 ml

EXTRAS:

  • all-purpose flour
  • extra virgin olive oil

Instructions

  1. Pinch a 1/4 tsp of saffron threads into 1 cup of luke warm water, mix together and set aside

  2. Meanwhile, add in 3 cups all-purpose flour into a large bowl, along with 1 tbsp baking powder and 3/4 tsp sea salt, mix together, then make a well, add in 2 tbsp extra virgin olive oil, 3 tbsp honey and the 1 cup of saffron infused water, mix together

  3. Once well mixed and you end up with a dough like texture, get in there with your hands and gently punch down on the dough and then fold together, continue to do this technique until you end up with a silky dough (takes between 1 to 2 minutes), then shape into a ball

  4. Sprinkle a clean flat surface with some all-purpose flour, add the ball of dough on top, cut it in half, then cut each half into 4 evenly sized pieces, for a total of 8 pieces of dough

  5. Heat a nonstick grilling pan with a medium heat

  6. Meanwhile, shape the first piece of dough, using your hands or a roller, shape the dough into your desired design, I like a rectangle design, making sure the thickness is no more than a 1/4 inch (.635 cm) thick, then drizzle the dough with a kiss of extra virgin olive oil and add into the hot pan, cook for 90 seconds to 2 minutes per side, making sure to add another drizzle of olive oil to the dough before you flip it

  7. Continue to shape and cook your flatbreads in this technique until they´re all done, serve warm or at room temperature, enjoy!

    Really really good! First time trying this. I first milled some whole wheat berries into flour and then followed the recipe. (Since milled whole grain is more coarse I ended up needing a few TB of white flour to get the dough kneadable.) I appreciate this recipe thank you for sharing!

    Last weekend i was make this flat bread recipe and i was really simple but very delicious!!
    Only i was use a different type of flour (italian typo 00) so i had to use a little bit more flour because my dough was a little bit to wet. When my dough was perfect and when i baked the breads they where delicous. For sure i will make them again. Thanks for this easy recipe Albert!!
