Good afternoon everyone! Last week, we did a full day of knocking out Dr. Checkups, Dentist appointments and eye doctor appointments. It gave me the perfect opportunity to try out a slow cookerrecipe I have had bookmarked for over a year! It turned out wonderfully and it was so nice to come home to dinner ready after a long day of appointments with 2 wound up, overtired kiddos! We absolutely LOVED it!

***Updated to add, this has become a STAPLE at our house! One of our all time favorite slow cooker recipes! A must try for busy families!***

Crock Pot Roasted Garlic Beef Sandwiches - Aunt Bee's Recipes (4)Save Recipe

Ingredients

  • 4 lb chuck roast
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1/3 cup brown sugar
  • 1 Tbsp hickory flavored liquid smoke
  • 8 oz of your favorite beer
  • 2 whole heads of roasted garlic
  • buns
  • Your favorite cheese, sliced (We like provolone!)

Instructions

Sprinkle the pot roast evenly with the salt, pepper, and onion powder and place the meat in the crock pot. Cover the top with the brown sugar, then add the beer and liquid smoke to the crock pot and cover it. Cook on low for 8 hours. At some point during the 8 hours (I did it the night before) roast the garlic. Squeeze out the cloves of garlic and mash them on a cutting board with a fork. Remove the lid of the crockpot and using kitchen tongs or forks, shred and pull apart the beef. At this time, remove any large chunks of fat or gristle too.

Add the roasted garlic to the crock pot juices and stir to combine. Add the shredded beef back into the crock pot and stir well to evenly distribute the garlic and make sure it is incorporated into the beef. Cover the beef and cook it on low for another 30 minutes.

Toast your buns and melt your cheese if desired. Serve with extra juice from the crock pot for dipping. Enjoy!

      Thank you Christian! I don't use my slow cooker a whole lot now, but I did when I was a working mom! It was a lifesaver!

    Hi Brandi!I've recently discovered your website and delicious recipes (OMG, to DIE for!). I have a question about the sandwiches in the pictures above. It looks like you added peppers and sliced mushrooms and I was wondering how you prepared them. Also, what is your favorite cheese to top them with? Thanks so much. I can't wait to try these!

      Hi Nicole! Thank you so much for stopping by and your sweet message! This recipe was blogged back in my early days and I really need to update it and add the optional sauteed veggies to the ingredients list. I just saute the onions, peppers and mushrooms in a very hot skillet in butter for a couple of minutes until done to my liking. It's completely optional but good if you have some extra time ;-) We like provolone on these sandwiches. Let me know if you try it! We love it!

    Used Pepsi instead of beer (since we dont drink it), I also left out the brown sugar figuring the sugar from the drink would be enough and it was - this was so tasty! Even better the next day, topped with shredded mozzarella and provolone (broiled so it was nice and melty) with lettuce and mayo served with chips one day and fries another. I also plan to add just the beef to a pile of cheese fries I think that would be a delicious party snack!
