Rarely does a meal go by in my house without bread being involved in some shape or form. When we are all watching our carbs, we simply make low-carb bread recipes, like classic keto bread, coconut flour bread, and cloud bread.

Made famous on Tiktok, this viral bread recipe gained popularity for its unique appearance, delicate texture, and countless flavor combinations, all while being low-carb and high in protein.

What is cloud bread?

Cloud bread is, as the name implies, light and fluffy bread baked into the texture of a cloud. Though if I can be technical, it’s really more of a soft baked meringue as there are no real “bread” ingredients used. This means it’s also incredibly low in carbs, gluten-free, and suitable for a keto diet.

Here’s why it’s one of my favorite bread recipes:

  • Have it how you like it. I give you the base recipe plus a handful of equally delicious flavor combinations so you can make it different every time.
  • Surprisingly versatile. For how delicate this bread is, it’s just as versatile as no yeast bread. Turn it into low-carb sandwiches, breakfast toast, or cloud pizza. The options are endless.
  • Diet-friendly. Like cottage cheese bread, if you’re looking for a low-carb, low-calorie bread recipe that’s nutrient-dense, this bread ticks all the boxes.

Ingredients needed

Just 4 albeit unique ingredients are all that’s required to make this cloud bread recipe. Here’s exactly what you’ll need:

  • Eggs. Use eggs at room temperature and separate the egg yolks from the egg whites.
  • Cream of tartar. Technically optional, though I highly suggest using it to help stabilize the eggs.
  • Salt. Just a dash to add flavor.
  • Mascarpone cream cheese. Softened and preferably full-fat. I’ve also tried this recipe with regular cream cheese, creme fraiche, and dairy-free cream cheese, and each works wonderfully.

How to make cloud bread

Step 1- Prep work. Preheat the oven to 285F/140C and line a baking pan with parchment paper.

Step 2- Separate the eggs. Separate the egg whites and yolks into separate bowls. Add cream of tartar and salt to the egg whites. Using a hand mixer or stand-mixer, whip the whites until stiff peaks form. To the egg yolks, add the mascarpone cheese and whisk to combine.

Step 3- Make the batter. Add the egg yolk mixture to the egg white mixture and use a silicone spatula to carefully fold the two together.

Step 4- Bake. Spoon the batter into 12 circular discs onto the prepared baking sheet. Bake for 25-30 minutes until golden. Let the bread cool on the baking sheet for 10 minutes, then transfer the bread to a wire cooling rack to cool completely.

Tips to make the best recipe

  • Use room temperature ingredients. I know I say this with every baking recipe, but I especially mean it with this one! The colder your ingredients are, the longer it will take to combine them, and the more air you’ll lose in the bread.
  • Fold, do not stir. When combining the egg whites and yolks, you’ll want to be careful not to overmix. Otherwise, you’ll end up with dense, flat bread.
  • Keep the eggs separate. Even the tiniest bit of yolk in the egg whites can prevent them from forming into stiff peaks– ask me how I know!
  • Add food coloring. The way I see it, we’re already testing the boundaries of bread, so we might as well go big or go home and add a few drops of your favorite food coloring.

Flavor variations

I really enjoy this keto cloud bread as is, but to make things interesting, here are some fun flavor combinations:

  • Cheese- Sprinkle 2-3 tablespoons of mozzarella or cheddar cheese on top of the cooked bread. Place back in the oven for a further 2-3 minutes.
  • Sesame- Sprinkle 1 tablespoon of sesame seeds over the mixture before baking.
  • Italian- Add dried Italian mixed herbs and garlic powder.
  • Everything- Fold through 1 tablespoon of everything but the bagel seasoning and ½ tablespoon on top of each portion of the bread.
  • Chocolate- Fold through ¼ cup of cocoa powder and 2 tablespoons of powdered sugar into the egg yolk mixture.
  • Ranch- Sprinkle 1 ½ teaspoons of ranch seasoning into the egg yolk mixture.

Storage instructions

To store: Leftover cloud bread can be stored in an airtight container in the refrigerator for up to 5 days.

To freeze: Place the bread in a freezer-safe container and freeze for up to 2 months. Let the frozen bread thaw overnight in the fridge before reheating.

To reheat: Reheat leftover bread in your toaster at the lowest setting or in the air fryer at 325F for 1-2 minutes.

Instructions
